- For Kadahi masala-
- 1 Tb coriander seeds
- 2-3 dry whole red chillies
- 1 tsp jeera / cumin
- 1 tsp saunf/fennel
- 3-4 cloves/laung
- 2 green cardamom
- 5-6 black pepper corns
- For Kadahi gravy-
- 2 Tbsp+ 1 Tbsp ghee+oil
- 1 tsp fenugreek/ methi seeds
- 1 small onion finely chopped
- 2 medium tomatoes chopped
- 2 Tb tomato puree
- 1 inch ginger chopped in jullienes
- 1/4 tsp turmeric
- 1 tsp Kashmiri red chilli powder
- to taste Salt
- Other ingredients-
- 1 medium onion chopped into dices/cubes
- 1 large green capsicum chopped into dices
- 500 g malai paneer chopped into 1 inch dices
- 1 Tb kasuri methi
- 1 tsp garam masala
- as required Green coriander for garnishing
Steps to make to make Kadahi Paneer
- To prepare Kadahi masala, dry roast all ingredients under Kadahi masala till slight fragrance is there. Cool and grind to a coarse powder or pound coarsely in a mortar and pestle.
- To prepare Kadahi gravy. Heat the oil and ghee in a pan. Add methi Dana. Now add chopped onion and cook till transparent. Add tomatoes and tomato puree and salt and cook till gravy is soft and oil seperates.
- Now add the ginger jullienes, haldi, Kashmiri red chilli powder and cook for another 2-3 minutes. Add water if required to make the gravy as semi liquid.
- Heat 1 tsp ghee in a pan and saute onion dices and capsicum dices till slightly soft. Now add paneer and saute for a minute.
- Now add the prepared gravy and the kadahi masala to it. Mix well and cook for 1-2 minutes. Add crushed kasuri methi and garam masala and mix well. Cook for a minute and serve garnished with coriander leaves and teaspoon of butter(optional).
